Kimchi Pancakes

Kimchi is a traditional fermented Korean side dish made of vegetables with a variety of seasoning like chili peppers, garlic, scallions, and other spices. Among kimchi varieties, napa cabbage kimchi is very common.


Kimchi is rich in vitamins A and C, and due to its fermentation process is also rich in beneficial gut-boosting lactobacilli bacteria. It has potent anti-oxidative and Immune-stimulating activities along with anti-obesity effects and more.

Kimchi can be eaten alone or with white rice. It is also use in making dishes such as kimchi stew, kimchi soup, kimchi fried rice etc. Today I like to start with kimchi pancakes. Besides kimchi other ingredients are pretty much easier to access from your kitchen.

Adapted and slightly modified from Maangchi
Kimchi Pancakes
Ingredients:
¾ cups kimchi (cut smaller size and measure)
2 tablespoons diced onion
A stalk of spring onion
3 tablespoons kimchi juice
¼ cup water
½ teaspoon salt
½ teaspoon sugar (more if prefer less sour)
½ cup all-purpose flour
2 tablespoons oil fry cooking


Methods:
1. Add all ingredients into a mixing bowl. With a spatula mix till combined.

2. Heat up a non-stick pan over medium high heat. Add in oil. Pour pancakes batter and slightly spread batter evenly with spatula or spoon.

3. Cook for about 1 minute or till the base is set. Turn over the pancakes and cook further about 1 ½ minutes. Transfer to a cutting board. Cut the pancakes once cool.
